I had no idea that meat juice would start to congeal if left out for an extended period of time. Interesting.
What at first appeared to be glistening meat turned out to be hundreds and hundreds of baby maggots… When I approached the meat, some of them stood on end and waved their little bodies back and forth. I think they were thanking me.
Just when I thought I could almost handle it, I inhaled raw stench. I couldn’t swallow properly for at least 10 minutes afterward.
What could possibly be more appetising than raw horse meat?
Raw horse meat with anchovies and a raw egg of course. Yummy!

Steak tartare is a meat dish made from finely chopped or ground raw beef or horse meat. Tartare can also be made by thinly slicing a high grade of meat such as strip steak, marinating it in wine or other spirits and spicing it to taste, and then chilling it. It is often served with onions, capers and seasonings (the latter typically incorporating fresh ground pepper and Worcestershire sauce), and sometimes with a raw egg, and usually served on rye bread.
