Eating testicles is always a transcendental, yet unsettling experience.
They are fiddly to prepare, removing them from the membrane and then chopping them into small chunks. They taste a little musky, and… well… frankly… testicular.

Rocky Mountain oysters, also known as prairie oysters, are a North American culinary name for edible offal, specifically buffalo or bull testicles. They are usually peeled, coated in flour, pepper and salt, sometimes pounded flat, then deep-fried. This delicacy is most often served as a starter.

To avoid the risk of food poisoning:
- Sauté chicken livers in small batches to allow for effective cooking
- Sauté chicken livers for at least 5 minutes or until an internal temperature of >70°C has been reached and maintained for 2-3 minutes.
- Chicken livers should be cooked until they are no longer bloody at the core.
- Ensure juice from uncooked chicken livers does not contaminate other foodstuffs.
- Thoroughly clean anything that has come into contact with uncooked chicken livers
- Use a separate board and utensils for preparing poultry.
The chunks of meat inside it offer ample proof of why horseflesh is usually used in dog food.
